Peppermint Bark Popcorn

It was popcorn movie night last night and I decided to put a little spin on our popcorn. It was a welcomed surprise and now we’d like to share the recipe with you!

Guilt-Free Peppermint Delights

I don’t know what it’s like in your part of the world, but it’s been very hot where we live. Humidity is around 91%, temps are near 100 degrees…this means a cool, refreshing treat is in order and these Guilt-Free Peppermint Delights are just what we need!

They whip up very quickly!  Take them out of the freezer and enjoy!

What a wonderful treat when we feel like we are roasting in this heat, (hey, that totally rhymed! lol).

Feel free to switch out the agave nectar for a sweetener of your choice.

Homemade Chocolate Mint Ice Cream

This recipe was a hit on our hot summer day yesterday. It was cooling, and equally refreshing. Oh, and easy to make!

Basic Ingredients:

  • 1 cup unsweetened almond milk in step A, plus 2-4 tablespoons in step B
  • 3-4 tsp. of sweetener of choice (recipe called for Truvia, I used Walmart’s Pyure)
  • 1 tsp. vanilla
  • 1/4 tsp. glucomannan or xanthan gum
  • 1 tsp. tahini, peanut butter, or heavy creamer
  • 1 Tbsp. cocoa powder
  • 3 drops Peppermint Vitality essential oil

Step A:

  1. Pour 1 cup unsweetened almond milk into blender.
  2. Add 3-4 tsp. of sweetener.
  3. Add 1 tsp. vanilla and 1/4 tsp. glucomannan or xanthan gum.
  4. Blend for 30 seconds to 1 minute then pour this liquid into 1 1/2 ice cube trays and freeze.

Step B:

  1. When you are ready to eat your ice cream, take frozen cubes from the freezer and place in food processor or blender.
  2. Process of blend until a powdery consistency is reached  (like dry snow).
  3. Stop processing and add about 2-4 more tablespoons of almond milk, 1 teaspoon heavy cream, tahini, or peanut butter, 1 Tbsp. cocoa powder and 3 drops Peppermint Vitality essential oil. Blend again for a few minutes until ice cream/soft serve texture forms and the consistency is no longer like powdery snow, but holds together.
  4. Scoop into a bowl and enjoy!
